Wine-Glazed Grilled Halibut

One evening I decided to grill fish, just for the halibut. Sorry, I know, but I just couldn’t resist. It’s a carry over from my childhood. Same with “Those cows are outstanding in their field!” Yuk, yuk, yuk. But I digress. My family loves seafood, so I’m always looking for ways to incorporate it. This is one of those ways. And what a good way it is, too. The smokiness from the grill really mixes well with the wine and butter and also helps to cut some of the sweetness from the wine.

Ingredients:

1 cup sweet wine (I used moscato)
1 garlic clove, crushed
2 Tbs butter
6 halibut filets
Lemon wedges for serving

Preparation:

Heat grill over medium-high. In a small combine wine, butter, and garlic. Bring to a boil and reduce by half, about 5 minutes. Season fish with salt. Grill, basting often with wine mixture, until cooked through, about 6 minutes. Serve with lemon wedges.

Serves 6
