Chicken with Summer Squash

This dish came together so incredibly easy and was incredibly tasty! The summer squash surprised me with the sweetness it brought, which would have been too much had the acidity of the tomatoes not cut it. I’m truly looking forward to leftovers for lunch.

Ingredients:

1 purchased roasted chicken, chilled (thighs & legs work best for my family and our local store sells just those parts in a bag. Saves a ton of time and everyone is happy) 

 1 1/2 Tbs olive oil
4 small or 2 medium yellow summer squash, quartered
2 cloves of garlic, minced
1/4 tsp salt
1/4 tsp black pepper
1 cup yellow or grape tomatoes

Preparation:

If not purchased cut up, cut chicken into quarters. Heat olive oil over medium-high heat. Add chicken and cook, for 3-4 minutes or until brown. Remove from skillet. Add squash, garlic, salt, and pepper to pan drippings. Cook and stir for 2 minutes.

Return chicken to skillet. Cook covered over medium heat for 10 minutes until chicken is heated through and squash is tender. Add tomatoes the last 2 minutes.
